Sweet snake fruit compote with coconut milk

Ingredients (for 2-3 servings):

  • 6–8 snake fruits
  • 200 ml coconut milk
  • 2–3 tablespoons brown sugar or palm sugar (depending on desired sweetness)
  • 1 pinch of salt
  • ½ tsp vanilla extract
  • 1 tsp cornstarch
  • Some toasted coconut flakes or chopped nuts for sprinkling

Preparation:

  1. Preparing snake fruit

    • Remove the peel and core. Cut the flesh into pieces or slices.
  2. Make compote

    • Pour the coconut milk into a saucepan and heat over medium heat.
    • Add sugar, salt and vanilla extract.
    • Bring to a boil while stirring until the sugar has dissolved.
  3. Add snake fruit

    • Carefully add the snake fruit pieces to the hot coconut milk.
    • Simmer over low to medium heat for about 5-8 minutes until the fruit pieces soften but do not fall apart.
    • If you want a thicker consistency, you can dissolve the cornstarch in a little cold water and briefly stir it into the simmering mixture until it thickens.
  4. Season to taste

    • Add more sugar or a pinch of salt to taste.
    • The compote should have a balanced sweetness while retaining the fruity aroma of the snake fruit.
  5. Serve

    • Pour the warm compote into bowls.
    • Garnish with toasted coconut flakes or chopped nuts (e.g. cashews).
    • Serve hot, lukewarm or chilled – depending on your personal preference.

Tip: The compote also tastes wonderful with pandan rice, ice cream or as a topping for pancakes.
